Spread the fillets with 2-3 tablespoons olive oil, season with salt and pepper, drizzle with thyme and cook on grill (a 250gr and 2cm fillet needs about 4-5 minutes for rare, 10-12 minutes for medium or 17-18 minutes for well-done). While cooking the fillet, mix the butter, the green pepper and the Chavez. When the fillets are ready, pour a tablespoon of the mixture on each fillet and serve.
*Chives: The flavor slightly tastes like an onion but it is thinner and more delicate, and its green leaves are very thin which are cut by scissors. It gives a great flavor in soups and salads.
